Due to the lack of skilled manpower and rising food cost, most food and beverage establishments nowadays rely on frozen bake-off products, pre-mixes and ready-to-use products. This unit will teach learners how to use pre-mixes, frozen and bake-off products to prepare pasrty and baked items like a professional pastry chef.
Mini lectures with presentations to explain concepts and theories
Practical activities including demonstrations, hands-on practice and observation
Mutual sharing, discussion and feedback.
On completion of this unit, learners shall be able to apply the following at the workplace:
Assemble tools and equipment for preparing pre-mix, frozen and bake-off products
Measure, prepare and check the quality of ingredients for preparing pre-mix, frozen and bake-off products
Follow pre-use instructions on food preparation
Verify the product quality which may include examining products, packaging, shelf-life and expiry dates to identify any signs of damage
Prepare pre-mix, frozen and bake-off products using various cooking methods, tools and equipment by following product instructions
Plate and present finished products or store appropriately to prolong shelf life in accordance with organisational
Pastry cooks, bakers as well as anyone from the food and beverage business
Participants should have a minimum: - GCE N Level pass (Grade 1 to 5) in English or equivalent, or - ES WSQ Workplace Literacy and Numeracy (WPLN) Level 4 and above or equivalent - Participants who do not meet the above requirements will be required to go through a short interview.
