(SOA Title: Pastry Preparation 2)


Course Objectives

This unit aims to empower individuals with busy lifestyles who desire the convenience of quickly assembling pastries at home, using premixed and frozen doughs. It provides comprehensive knowledge and practical skills in pastry making, emphasizing sweet and savory options. This unit will teach learners how to make Mini Beetroot Brownies (with Walnut and White Chocolate Velvet Glazing), Mini muffins (with Oats, Blueberry and Nuts/Seeds), Mini Croissants with Nutella and Almond Flakes, Smoked Salmon Puff Bites, Mini Veg Quiche.

Practical activities including demonstrations, hands-on practice and observation

Learning Outcomes

On completion of this unit, learners shall be able to apply the following at the workplace:

  • Prepare dough and batters from premixed and frozen products using proper methods and recipes
  • Verify the product quality by avoiding common faults and taking precautionary measures
  • Apply basic principles of baking to prepare doughs and batters for pastries using premixed and frozen products
  • Prepare icings, fillings, toppings, glazes and fondant for different pastry products
  • Apply mixing, piping and baking methods according to procedures

Attire

  • Wear Covered Shoes / Sneakers with socks
  • Wear Long / Full Pants
  • Have Clean, Short, Trimmed, Natural Nails (No nailpolish, gelish or artificial nails)
  • Tie up Medium / Long Hair neatly

Note : Trainees may be sent back to change their attire if they fail to meet the above requirements

Pastry cooks, bakers as well as anyone from the food and beverage business

Minimum Entry Requirement

Participants should have a minimum: - GCE N Level pass (Grade 1 to 5) in English or equivalent, or - ES WSQ Workplace Literacy and Numeracy (WPLN) Level 4 and above or equivalent - Participants who do not meet the above requirements will be required to go through a short interview.
