This module is one of the pre-requisite training for every food & beverage service practitioner in order that they can perform their duties efficiently. It is linked to two different competency units; Maintain Safe & Secure Working Environment and Follow Food & Beverage Safety & Hygiene Policies and Procedures. As such, there will be a brief revision about food safety and hygiene, which is a compulsory knowledge component for all food service practitioners. Based on the four competency elements, participants will have more in-depth knowledge and practice in clearing, wiping and resetting tables. They will learn how to use the various cleaning products and equipment; learn how to maintain and monitor their work environment; as well as to prevent and handle potential hazards in order to provide a safe and healthy environment in the food and beverage establishment.
Participants also learn the importance in performing closing duties at the end of the day before they leave their place of work. These duties include the understanding of why they must check and switch off electrical equipment, dispose trash and sort out recyclable items properly; restock mise-en-place and table setups and the storage of perishable food appropriately.
At the end of this programme, learners will be able to maintain food and beverage service environment by:
Clearing, Wiping and Resetting Tables
Maintaining Carpets/Floors
Monitoring Food Service Area
Performing Closing Duties
Mini lectures to explain concepts and theories
Practical activities including role plays, demonstrations and practical performance
Mutual sharing and feedback.
Service Crew, Beverage Crew and all F&B service personnel.
