Chocolatey Christmas Log Cake and Spiced Speculoos Cookies

Course Objectives

To prepare a Classic Chocolate Log Cake made with a light chocolate sponge, chocolate cream filling and shiny chocolate ganache, using the correct methods and techniques and bake perfectly crisp, spiced Speculoos Cookies to complement the log cake.

  • Make a light chocolate sponge swiss roll without any additives
  • Fill, roll it with chocolate cream using correct techniques
  • Decorate the log cake festively with shiny chocolate ganache
  • Bake spiced, perfectly crisp Speculoos cookies
