Diploma in Sustainable Food Safety Management

Course Overview

Graduates of this programme will be equipped to lead food safety and sustainability initiatives, strengthen governance and food safety culture, apply international standards, and improve food safety and quality management systems. They will also be able to support audits and compliance, manage risks and incidents, enhance supply-chain traceability, advance sustainable operations, and apply digital and AI-enabled solutions to transform food businesses.

Course Objective

The objective of this programme is to equip students with the knowledge, skills and practical capabilities to lead and improve food safety, quality, sustainability and operational performance across food businesses. students will develop the ability to apply food safety governance, international standards, HACCP-based food safety management systems, risk and incident management, supply chain traceability and sustainable operational practices. They will also develop the capability to use digital and AI-enabled solutions, assess operational gaps, develop evidence-based improvement strategies, and lead practical transformation initiatives that support compliance, resilience, sustainability and continual improvement.

Learning Outcomes - Modular

1. Food Safety Leadership, Governance and Culture
This module introduces learners to the leadership, governance and cultural foundations required to drive strong food safety performance within an organisation. Learners will explore how management commitment, clear governance structures, staff engagement, food safety KPIs and effective decision-making contribute to a proactive and accountable food safety culture. The module also prepares learners to identify governance gaps, respond to audit challenges and develop a practical Food Safety Leadership Charter.
 
2. International Food Safety Standard and Compliance Practice.
This module introduces learners to international food safety standards, compliance expectations, and practical food safety control approaches used across global food service environments.
The module also introduces regional food safety practice snapshots from Europe, the Middle East, Australia/New Zealand and Asia. These are taught at an operational level to help learners understand how food safety expectations may differ across markets without requiring them to memorise complex legal frameworks.
 
3. Food Safety Management Systems and Audit
This module equips learners with the knowledge and practical skills to develop, assess and improve a HACCP-based Food Safety Management System. Learners will examine food hazards, prerequisite programmes, process flow mapping, HACCP principles, CCP monitoring, corrective action, verification, validation and documentation control. The module also develops internal audit capability through audit techniques, non-conformance reporting, root cause analysis and CAPA planning.
 
4. Food Quality, Risk and Incident Management
This module develops learners’ ability to manage food quality assurance, operational risks, product deviations and food safety incidents in a structured and practical manner. Learners will explore quality standards, specifications, risk assessment tools, complaint handling, allergen and contamination risk management, escalation procedures and crisis communication. The module also prepares learners to develop a Food Safety and Quality Risk Register and Incident Report to support effective control, response and continual improvement.
 
5. Sustainable Operations in Food Business
This module introduces learners to sustainability principles in food operations, with a focus on reducing food waste, resource leakage and operating costs. Learners will examine environmental, social and economic sustainability practices across receiving, storage, preparation, production, service, procurement, packaging, energy and water use. The module equips learners to develop a practical sustainability improvement proposal and a 30-Day Food Waste and Resource Reduction Plan supported by cost-saving logic.
 
6. Food Supply Chain & Traceability Management
This module equips learners with the knowledge and practical skills to manage food supply chain risks, strengthen traceability and prepare for effective product recall or withdrawal. Learners will examine supplier approval, receiving controls, cold chain management, batch coding, product identification, allergen and labelling traceability, food fraud risks and digital traceability tools. The module also develops learners’ ability to conduct a traceability simulation and prepare a Mock Recall Plan with a Traceability Map.
 
7. Digital Transformation and AI in Food Business
This module introduces learners to the use of digital tools, data and AI-enabled solutions in food safety and operational control. Learners will explore digital temperature monitoring, electronic records, QR-based checklists, KPI dashboards, data trend analysis, smart monitoring, AI-assisted SOP writing, audit preparation and incident reporting. The module also prepares learners to develop a Digital Food Safety Dashboard Prototype Proposal with implementation cost considerations, risks and control measures.
 
8. Food Industry Innovation and Transformation: Project
This module enables learners to integrate and apply the knowledge, tools and methods developed across the programme into a practical workplace improvement portfolio. Learners will work individually or in groups to analyse a real or simulated food operation, diagnose current-state gaps, assess food safety readiness, develop improvement plans and propose transformation actions across food safety, HACCP/FSMS, sustainability, risk management, traceability, recall readiness and digitalisation. The module concludes with a Final Transformation Project and executive presentation.

This diploma is suited for aspiring and current F&B, hospitality, and food operations personnel who want to strengthen their skills in food safety, quality, compliance, sustainability, risk management, supply chain traceability, and digital transformation. It is also suitable for those transitioning into food safety, quality, or operational roles and seeking to develop their capabilities for career progression and leadership opportunities.

Minimum Entry Requirement

Age: 17 years old and above
 
Language:
Minimum a C6 pass in GCE ‘O’ Level English Or
Band 5.5 in IELTS OR Minimum score of 61 points (internet-based total) in TOEFL
 
Academic:
Minimum a C6 pass in 3 GCE ‘O’ Level subjects (including English) or equivalent Or
Higher NITEC Certification from the NITEC School of Hospitality Or Equivalent Or
Applicants with the minimum age of 30 who do not possess the above qualifications but have a minimum of 8 years of working experience may be considered for entry into this course
