2. Food Safety and Hygiene for Culinary Operations
This module provides learners with foundational knowledge of food safety and hygiene practices used in professional food-service operations. Learners will examine food contamination, personal hygiene, temperature control, cross-contamination, cleaning, sanitising, pest prevention and safe food-handling procedures from receiving through service.
3. Culinary Stock, Inventory and Digital Control Systems
This module introduces learners to stock and inventory-control practices used in professional culinary operations. Learners will receive, inspect, store, issue, and account for ingredients using manual records, spreadsheets, and selected digital tools. The module covers stock rotation, par levels, stocktaking, variance, wastage, purchasing, and responsible use of artificial intelligence tools to support inventory planning.
4. Applied Nutrition and Allergen Management for Culinary Operations
This module introduces learners to nutrition and allergen-management principles relevant to professional culinary operations. Learners will examine the nutritional functions of common food components, portion composition, dietary requirements, food allergies, food intolerances and allergen cross-contact. Through menu-based activities, learners will interpret ingredient information, prepare allergen documentation and recommend practical controls.
5. Meat Identification, Fabrication and Yield Management
This module provides learners with the knowledge and practical skills required to identify, handle, fabricate, and prepare various types of meat used in professional food service operations. Learners will gain hands-on experience in meat fabrication techniques, including trimming, deboning, portioning, and yield management. The module also emphasizes food safety, hygiene, storage requirements, and the selection of appropriate cooking methods for different meat cuts.
6. Seafood Identification, Fabrication and Sustainability
This module provides learners with the knowledge and practical skills required to identify, handle, prepare, and fabricate various seafood products used in professional food service operations. Learners will gain hands-on experience in cleaning, scaling, filleting, shucking, portioning, and preparing fish, shellfish, and crustaceans while maintaining quality, freshness, and food safety standards. The module also covers seafood storage requirements, sustainability considerations, yield management, and suitable cooking applications for different seafood varieties.
7. Vegetable-Based Ingredient Preparation: Vegetables, Mushrooms and Nuts
This module provides learners with the knowledge and practical skills required to identify, handle, prepare, and process a variety of vegetables, edible mushrooms, and nuts used in professional food service operations. Learners will develop competency in selecting quality produce, applying appropriate preparation techniques, maintaining nutritional value, and ensuring food safety during storage and preparation.
8. Fundamental Stocks, Sauces and Flavour Foundations
This module provides learners with the fundamental knowledge and practical skills required to prepare classic stocks and sauces used in professional culinary operations. Learners will develop an understanding of the functions, ingredients, preparation methods, and applications of stocks and sauces as foundational elements of cuisine.
9. Fundamental Moist-Heat Cooking
This module provides learners with the fundamental knowledge and practical skills required to prepare and cook a variety of food items using basic moist-heat cooking techniques while maintaining product quality, food safety standards, and operational efficiency in a professional kitchen environment.
10. Fundamental Dry-Heat Cooking
This module provides learners with the fundamental knowledge and practical skills required to prepare and cook food using dry-heat cooking methods commonly applied in professional food service operations. Learners will develop competency in selecting suitable ingredients, applying appropriate cooking techniques, controlling cooking temperatures, and producing quality dishes while complying with food safety, hygiene, and workplace safety requirements.
11. Cold Kitchen, Basic Fermentation and Charcuterie
This module introduces learners to cold-kitchen preparation, including salads, dressings, cold sauces, sandwiches, canapés, platters, basic pickling, vegetable fermentation and introductory charcuterie. Emphasis is placed on cold-chain management, hygiene, product quality, presentation and safe preservation
12. Contemporary Cooking Techniques and Food Science
This module equips learners with the technical knowledge and practical skills required to apply contemporary cooking techniques and food science in a professional kitchen. Learners will develop competency in precision cooking, molecular gastronomy, dehydration, foam production and modern sauce preparation while applying scientific principles, food-safety practices and quality evaluation to produce innovative, consistent and professionally presented culinary products.
13. Food Styling, Plating and Digital Culinary Content
This module equips learners with the visual-design and practical styling skills required to present culinary products for restaurant service, photography, digital menus and social media. Learners will apply colour theory, composition, portion balance and safe garnish use while using smartphones to photograph and record culinary products.
14. Non-Alcoholic Beverage Appreciation and Food Pairing
This module introduces learners to the sensory evaluation and pairing of selected hot and cold non-alcoholic beverages. Learners will examine how taste, aroma, acidity, sweetness, bitterness, body, texture, intensity and temperature interact with savoury dishes, desserts and baked products.
15. Culinary Entrepreneurship, Menu Engineering and AI-Enabled Business Tools
This module introduces learners to the commercial principles required to develop and evaluate a small culinary business concept. Learners will formulate and cost recipes, recommend selling prices, engineer menus, develop promotions and create basic branded packaging concepts. They will also use spreadsheets and selected AI tools to support business planning while validating all generated information.
16. Capstone Project
The Capstone Project provides students with the opportunity to integrate and apply the knowledge and skills acquired throughout the diploma programme. Students will develop an original culinary concept, design a commercially viable menu, and execute selected dishes that demonstrate technical proficiency, creativity, food safety, and operational planning. The project culminates in professional food styling and photography, followed by a formal presentation and defence where students justify their culinary, business, and design decisions to an assessment panel.
