Course Overview

This programme is designed for personnel in supervisory job roles which involves establishing and overseeing food safety standards in their food establishments.

This training equips participants with occupational knowledge and skills in applying Hazard Analysis and Critical Control Point (HACCP) principles to develop, implement, maintain and update a HACCP-based Food Safety Management System (FSMS). This training also provides participants with knowledge and skills to perform internal audits of FSMS and manage and address non-compliances.

Course Objectives

To equip personnel working in retail and/or non-retail food establishments with the knowledge and application skills to:

  • Understand Hazard Analysis and Critical Control Point (HACCP) and apply Food Safety Management System (FSMS) principles
  • Carry out internal audit to ensure food safety programmes are compliant with local and international standards for HACCP/FSMS and applicable SFA Regulations
  • Manage and address non-compliance issues based on Food Safety Management System (FSMS) policies and procedures

Learning Outcomes

By the end of the course, learners will be able to:

  • Explain the fundamentals of the Hazard Analysis and Critical Control Point (HACCP) system and Food Safety Management System (FSMS)
  • Develop and implement Pre-Requisite Programmes (PRPs) to support food safety controls
  • Apply HACCP principles in the establishment and maintenance of an effective Food Safety Management System (FSMS)
  • Conduct internal audits of a Food Safety Management System (FSMS) to evaluate compliance and effectiveness

Assessment

At the end of the course, candidates will be required to undergo a 6 hours assessment consisting of a Practical Performance (PP) and a Written Assessment.
 
Participants who complete the course successfully will receive a Statement of Attainment (SOA) issued by SkillsFuture Singapore (SSG).
 

Minimum Entry Requirement

  • At least 21 years old.
  • At least secondary school education.
  • Able to speak, listen and read English at a proficiency level not lower than the Employability Skills Workforce Skills Qualification Workplace Literacy Level (WPL Level 5)
  • Attained WSQ Food Safety Course (FSC) Level 3 with valid certificate.
  • Applicants to source for a licensed F&B establishment or a mock-up kitchen set-up for on-site practical assessment and drawing the Food Safety Course Level 4 plan.
  • Recommended to bring a Laptop from second day of the course.

Pre-requisite for taking the FSCL 4 English

Have attained the Conduct Food and Beverage Hygiene Officer OR Food Safety Course Level 3 with valid WSQ certificate.

Attire

To fulfil the assessment requirements, in line with the Hygiene and Safety policies, participants are assessed on personal grooming and hygiene. Candidates are encouraged to adhere to the attire requisites stated below.

  • Smart casual attire - Please wear top with sleeves and long / full pants
  • Covered Shoes / Sneakers with socks - Please do not wear slippers, sandals or open-toe shoes
  • Clean, Short, Trimmed, Natural Fingernails - please remove any nail polish, gelish or artificial nails
  • Neat and Tidy Hair - Please tie up medium or long hair neatly

A Registration Fee of $10.90 (Incl. of 9% GST) will be collected upon course registration, and It is non-refundable.

Admin Fee for Absent and Reschedule: $32.70

Admin Fee for Make-up Session for Partial Absent, Appeal & Re-assessment: $54.50

Miscellaneous Fees refer to any non-compulsory fees which the trainees pay only when applicable. Such fees are normally collected by Eduquest when the need arises.
