At the end of the programme, learners will be equipped with the basic skills and knowledge to prepare and use western cold sauces at the
Mini lectures with presentations to explain concepts and theories Practical activities including demonstrations, hands-on practice and observation Mutual sharing, discussion and feedback.
On completion of this unit, learners will have the knowledge and skills to: Prepare emulsified sauces Prepare vegetable, fruit and/or herb based sauce Use western cold sauces
Kitchen crew, kitchen assistant, counter crew and anyone who is keen to learn how to prepare Western cold sauces.
